These tasty and crunchy roasted potatoes are easy to make and also a great side dish to go with fish, chicken, meats, or any vegetarian dish!
Ingredients:
1 small bag of small rainbow potatoes
3 tbs olive oil
3-4 garlic cloves
1/2 tsp dried rosemary
2-3 springs of fresh thyme
S+P
Directions:
Preheat the oven to 425º F
boil the potatoes until fork tender
let the potatoes cool down a bit until you are able to handle them
take a potato masher and mash each potato individually until flattened
place the potatoes on a pan with parchment paper
in a separate bowl mix olive oil, garlic, and dried rosemary, and S+P
Brush each potato with the olive oil mixture
S+P to taste
Put into oven and let bake for about 40 min, turning them over once halfway through.
Garnish with fresh thyme or rosemary springs.
